2021 Whale Rock Cabernet Sauvignon
This Cabernet Sauvignon from Whale Rock Vineyard is a structured bright wine showing lots of minerality. The vineyard boasts limestone rich, gravelly loam soils with marine fossils including whale bones. It’s located in the Templeton Gap district (the coolest sub-district of Paso Robles) on the west side Paso Robles.
The grapes were harvested on October 22 after a cool growing season. During fermentation the wine was punched down and pumped over once a day. The wine was aged in 75% new French oak for 25 months.
The wine is focused and bright with perfumed aromas. On the palate the wine is supple and fresh with flavors of cassis, ripe plums, and framboise layered with minerals, herbal savory notes of cedar and spice.
